Pohe is a Maharashtrian breakfast recipe or anytime snack made with beaten rice flakes. It is easy to cook & makes interesting start to the day.
Ingredients
4 cups pohe ( medium thick)
2 chopped onions
1 chopped potato
1tsp mustard seeds
1/4 tsp hing
1/4 tsp turmeric
8-10 curry leaves
2-3 chopped green chillies
Freshly grated coconut
Chopped coriander leaves to garnish
Juice of one lemon
4 tbsp oil
Salt to taste
Procedure
Wash the pohe under running water. Drain the water & let it stand in the strainer for 10 minutes.
Heat oil in pan.Temper it with mustard seeds,chillies,hing ,turmeric powder & curry leaves.Make sure the oil is sufficiently hot for mustard seeds to splutter. The entire taste depends on how well the tempering is done.
Then add chopped onions & potatoes.Stir well till the onions are translucent . Add salt just enough for the onions & potatoes.Sprinkle some water & cover & cook for 5 minutes. Check if the onions & potatoes are cooked.
Now take the strained pohe.Add salt in it.Sprinkle few drops of water if they look dry.Then mix them to the pan.Cover & cook for 5 minutes till it emits steam.
Garnish it with grated coconut & coriander leaves.Squeeze some lemon juice & serve hot
