Batata Vada is the most famous street food in Mumbai. Boiled potatoes are tempered with garlic, green chilies and ginger and coated in chickpea flour and then deep fried to golden brown colour.
Ingredients
5-6 boiled potatoes
4 green chilies
7-8 garlic flakes
1/2 inch ginger
A small bunch of freshly chopped coriander leaves
1/2 tsp turmeric powder
1/2 tsp chilly powder
1 cup besan (gram flour)
Salt to taste
Oil to fry
Pinch of Baking soda
Procedure
Mashed boiled potatoes & keep aside. Grind ginger,garlic and chili paste.
Now heat 1tbsp oil. Putginger,garlic and chili paste.
Add turmeric. Saute lightly. Then add mashed potatoes & salt. Mix well. Turn off the heat. Let this mixture cool. Then add chopped coriander leaves.
Make small balls of this mixture & keep aside.
To make the batter, take a cup of besan flour. Add turmeric, red chilly & salt. Add some water. The batter should be thick in consistency so that it coats the vadas well. Mix well so that there are no lumps. Now add a pinch of baking soda. This makes the vadas light.
Heat oil in pan to deep fry the vadas.
Dip the potato balls in hot oil. Fry them evenly from both sides till golden brown in colour.
Serve with dry red garlic chutney.
