Bombil is synonymous to mouthwatering fish. It is kind of fish (not duck ) ,called Bombay Duck in English.This fish is available mostly in the months of Aug-Sept in Mumbai. I was lucky to find it yesterday in the wet market here in Singapore. I could not resist getting them.Its a very tender & delicate fish.It cooks within no time.Let me share the recipe.
Ingredients
8-9 fresh bombils
3-4 green chillies
5-6 garlic cloves
Coriander leaves
1 tsp turmeric powder
2 tsp red chilly powder
1/2 cup coconut milk
1 tbsp tamarind paste
Salt to taste
Preparation
While purchasing the bombils check the eye of it.It should sparkle & the skin should be silvery shiny. If it looks pale ,then its not fresh. Take a look.
Raw bombil
Clean them & cut into 2-3 pieces each.For marinate make a paste (green masala ) with garlic, green chillies & coriander leaves & keep aside. Apply turmeric, red chilly ,green masala,tamarind paste & salt . Let it rest for an hour.
Marinated Bombil
Heat oil in a pan.When the oil is sufficient hot add 2-3 crushed garlic cloves to it till it turns golden in colour.Now add the marinated bombil & do not toss it at all else it will break. Let is cook for 5 mins.Then add some water to it.
Now add coconut milk to this.Check salt. Let it simmer for 6-7 mins.Bombil curry is done. Garnish with fresh coriander leaves.Can be served with chapati or steamed rice
