Chicken in hot garlic sauce is an Indo Chinese recipe with garlicy flavour with hot chili sauces. This spicy, tangy and mildly sweet chicken makes an excellent starter or can be served with fried rice or noodles and enjoyable as dinner at home or even at parties.
Ingredients
250 gms boneless chicken
1 green bell pepper
1 onion cut in cubes
1 tsp garlic paste
1/2 tsp pepper powder
1 egg
1 tbsp maida
1 tbsp corn flour
1-2 tsp corn flour for slurry
1 tbsp soy sauce
6-7 Kashmiri red chilies
8-10 garlic flakes
1 tbsp red chili sauce
1 tbsp tomato sauce
1 tsp vinegar
1tsp sugar
Spring onions 2-3 sprigs
Salt to taste
2-3 tbsp Oil
Method
Cut boneless chicken into stripes or cubes as per preference. Here I have used thigh boneless. Marinate with salt, garlic paste, pepper, maida, corn flour and egg. Mix everything together and keep aside for 15-20 minutes.
Soak kashmiri red chilies and garlic in warm water for about 15 minutes. Then grind it together to make chili paste which is deep red in colour
Heat a wok. Add oil for shallow frying chicken. Alternatively this chicken can also be deep fried. On high heat shallow fry the chicken 2-3 minutes on each side. Remove the fried chicken and in the same oil add chopped garlic and saute for 30 seconds.
Now saute the red chili paste till the time it gives out garlic aroma. Add onion cubes and bell pepper and saute .
Now add some water. then add red chili sauce, soy sauce, tomato sauce and sugar. When it comes to boil, add the cornflour slurry. Then mix the fried chicken, Sauce should coat the chicken pieces and should not be too runny. Add vinegar. Thrown in some chopped spring onions and turn off the heat.
Garnish with spring onion greens. Serve with egg fried rice
