Chicken Masala is a flavorful thick gravy dish comprised of onions, ginger garlic & variety of Indian spices.
Ingredients
1 kg Whole Chicken
3 sliced onions
2 tsp ginger garlic paste
3 tsp red chilly powder
1/2 tsp turmeric powder
1 tbsp yogurt
1/2 inch cinnamon stick
2-3 cloves
8-10 peppercorns
2 Bay Leaves
Ping of hing
3 tbsp oil
Salt to taste
Procedure
Wash & clean the chicken & cut into medium size pieces. Marinate with turmeric, red chilly powder, ginger garlic paste, yogurt & salt. Let it marinate in fridge for about 2-3 hours.
Slice onions & roast them in little oil till they get deep brown colour. Allow it to cool & grind it to paste.
Heat oil in pan. Add bay leaves, peppercorns, hing, cloves & cinnamon .Then add the onion paste & mix well for couple of minutes. Take care as it will splutter.
Now add the marinated chicken & mix well so that the masala coats the chicken. Add 1/2 cup water to this & mix again. Do not mix a lot of water as it will wash off the masala from the chicken.
Cover & cook for 10 minutes. Check again & adjust the salt. Some water can be added if required. The consistency of the gravy should be thick & not watery like curries. Cover & cook again for 5-7 minutes. Some chicken may take longer time to cook.
Chicken Masala is ready now. Garnish with fresh coriander leaves.
