Choco Walnut Brownies

Winter season often craves for baked goodies. Choco Walnut Brownies are simple, easy to make brownies which are chocolaty and have crusty top. It can be made by mixing all the ingredients with whisk and does not require fancy blender.

Ingredients

140 grams semi sweet chocoalate

200 grams powdered sugar

112 grams unsalted butter

95 grams Maida (all purpose flour)

2 tbspn cocoa powder

1 tsp instant coffee(optional)

Handful of toasted chopped walnuts

3 eggs (150 grams)

2 tsp Vanilla essence

Pinch of salt

Method

Line a cake tin with aluminum foil and grease it with butter. Pre heat the oven at 180 degrees celcius for 10 minutes. A square tin with 8 inches is perfect for the given ingredients. My tin was smaller and I had to microwave the remaining brownie batter. But baking in oven gives the perfect crusty texture which a brownies have.

Chop chocolates into fine pieces and microwave them for 1-2 minutes with butter. Or melt the chocolate by double boiling method. Now add cocoa powder and coffee and mix when the chocolate it still warm.

Now add sugar and whisk it. The mixture may turn a bit hard to mix. When the sugar gets dissolved add vanilla essence , salt & then add one egg at a time and mix well. Mix handful of walnuts to it. Reserve few to sprinkle at the top. Then add the maida and mix everything till it is well combined.

Pour the mixture in the tin and bake for about 20-22 minutes. Sprinkle the remaining walnuts. When a toothpick is inserted it should have moist crumbs clinged to it and not clean as in cakes. Let it cool completely before cutting into pieces.

Perfect crusty and chocolaty brownies are ready. It can be served with a scoop of vanilla ice cream or fresh whipped cream.

Tip: When all the ingredients are measured exactly the outcome is perfect.
