Broccoli is available in plenty in the winter season. Broccoli makes a perfect soup for the season. It is power packed with nutrients like Vitamin C , Zinc and iron. This makes it great immunity booster soup. The lovely green color is visually appealing and so is the taste.
Ingredients
250 grams Broccoli
5-6 garlic pods chopped
2 tbsp fresh cream
Salt to taste
1/4 tsp pepper powder
Method
Cut broccoli into bigger florets. Boil 2 cups water. Add the broccoli florets to it. Cook for 6-7 minutes. The broccoli will turn into bright green color. Cool it a bit. Do not cool completely as it will give grainy texture when pureed. Now puree it in blender. Add some water if required.
In a pan add 2 tsp butter. Then add chopped garlic. Let the garlic give nice aroma. Now mix the broccoli puree. Add water to adjust consistency. The water in which the broccoli was boiled can be used here. Season with salt and pepper.
Mix some fresh cream or milk to give it creamy taste and good texture. Serve hot.
