Dhokla is a popular Gujarati savoury snack made with chick pea flour and yoghurt. It is steamed with leaving agents and tempered with mustard seeds and garnished with fresh coconut and coriander leaves. The steamed dhokla can be enjoyed in evenings with a cup of tea.
Dhokla is a snack or even as an accompaniment to lunch or dinner. .
Ingredients
1cup Bengal Gram flour ( besan)
1 cup yogurt mixed with warm water
1 tsp ginger-chilly paste
1 tsp sugar
Salt to taste
2 tbsp oil
1 1/2 tbsp Fruit Salt
1/2 tsp mustard seeds
Pinch of Hing
Grated coconut to garnish
Coriander leaves to garnish
Procedure
Mix gram flour & yogurt with warm water so that no lumps are formed. It should be idli batter consistency. If it is thinner then spongy dhoklas cannot be made.
Add turmeric, ginger-chilly paste, salt, sugar to this batter.Whisk it in one direction.
Keep the steamed cooker ready.Grease a pan with oil & preheat the pan in the steamer/cooker.
Add oil & fruit salt to the batter & mix lightly.The batter will rise & feel light. Pour it immediately into the greased pan & steam it for 10-12 minutes.
When semi hot, make square shapes of dhoklas.Then allow it to cool.
Temper with mustard seeds & hing. Garnish with coconut & coriander leaves. Dhokla is ready to serve. Can be served with green mint chutney or can be relished as it is.
