Goda Sheera is made in Maharashtrian households on the festive as well as religious occasions. Today on account of Guru Poornima I would like to share the recipe of goda sheera. Semolina (rava) is lightly roasted in ghee, cooked with aromatic saffron milk, dry fruits and flavorful cardamom.
Ingredients
1 cup rava
1 cup ghee
1 cup sugar
1 cup milk
2 cups water
Dry fruits as per choice (almonds, cashews,pistachios)
1/2 tsp cardamom powder
Generous pinch of saffron
Pinch of salt
Method
Soak saffron strands in a teaspoon of warm water. Saffron will release its color after a while.
Heat pan on low flame. Roast rava with a teaspoon of ghee. Slowly add ghee. Rava will start getting aromatic and slightly change color to pearly white. Roast for a while. Take care not to let the rava turn brown as the sheera will lose its rich golden color.Reserve some ghee to drizzle later.
Now add milk,water and sugar to the rava and mix well. Add all the dry fruits (nuts can be roasted to impart more flavor). Mix well till the sugar dissolves taking care that there are no lumps. Mix the soaked saffron and add pinch of salt. Add the reserved ghee spoon by spoon.
Rava will start absorbing all the liquids. When all the liquid is almost absorbed, mix the remaning ghee. Cover and cook for 2-3 minutes. Goda sheera is ready, Now sprinkle cardamom powder and mix well. Sprinkle few dry fruits before serving.
Tip : Cardamom is to be added in the end so as to retain its flavor. If it is mixed in the hot mixture it tends to lose flavor.
