Kairi che Panha is a Mahashtrian Summer drink made with raw mangoes and sweetened with jaggery and sugar and flavoured with saffron and cardamom. It instantly refreshes from scorching heat in summers. Raw mangoes are excellent source of Vitamin C. This tangy sweet drink is must have to boast your energy levels and beat the heat.
Ingredients
3/4 raw mangoes
1 cup jaggery
1 cup sugar
Salt to taste
Saffron strands
1/2 tsp Cardamom powder
Method
Peel the raw mangoes and cook in pressure cooker.
Remove the pulp and discard the seed.
Add jaggery and sugar when hot. Bring it to room temperature.
Grind the mixture in blender.
Add salt, saffron and cardamom. Concentrate raw mango pulp is ready.
While serving . Take 2 spoonfuls of pulp. Add chilled water and stir it well. Serve it chilled.
Sugar and jaggery quantity has to be adjusted as per tartness of raw mangoes.
