Kaju-Paneer Burfi

Kaju Paneer burfi is quick & easy to make Indian sweet on festive occassions. It does not require any prior preparations. It needs only four main ingredients.





Ingredients

1 cup cashews

1/2 cup milk

100 gms paneer (cottage cheese)

1/2 cup sugar

1 tsp ghee

Cardamom powder

Pistachios to garnish


Method

Soak cashews in milk for couple of hours. Grind it to fine paste in mixer. In the same grinder mix sugar, paneer & grind to make smooth paste of cashew, sugar & paneer.

Now take a flat bottom non stick pan. Add ghee. When the ghee is hot , add this smooth paste to it. Keep stirring constantly so that the mixer does not stickto the bottom of the pan. Remember to do this on low flame.


After 10-12 minutes, the mixture will begin to leave the sides of the pan & gets a bit thick. Now mix cardamom powder to it & mix well.

Now grease a pan with ghee & put the mixture into it. Spread it evenly with spatula. Allow it to cool for couple of hours.Garnish with chopped pistachios.Cut the burfi into squares.
