Lazeez Palak

Lazeez Palak is a healthy recipe with spinach combined other vegetables. Here I have used mushrooms, baby corn, asparagus, carrot & paneer. Many other veggies like cauliflower, french beans, tomatoes, capsicum etc can be used. It is the best way to eat veggies & palak.




Ingredients

A bunch of Spinach leaves

50 gms paneer.

4-5 chopped garlic cloves

1/2 tsp Cumin seeds (jeera)

1/2 inch chopped ginger

1 chopped chilly (optional)

1/2 tsp red chilly powder

1 onion chopped

5-6 mushrooms

5-6 asparagus 

1 carrot

2-3 baby corns

Salt to taste

1 tbsp oil

1/2 tsp garam masala

Pinch of black pepper


Method


Blanch palak leaves in hot water for one minute & then wash under running water. Grind it to paste & keep aside.

Heat some oil in pan. Add chopped garlic to it & saute.Then mix the palak puree. Add some salt to it. Turn off the heat once it comes to boil.

In another pan heat oil. Add jeera, chopped onions & saute it till it becomes translucent.Then add chopped ginger & chilly. Then mix all other veggies to it. Other veggies except mushrooms can be blanched for 2 minutes in boiling water.

Add salt, garam masala & mix well. Saute paneer separately.Sprinkle pinch of black pepper on it.

In the serving dish, put the cooked palak puree & then the other veggies & then top it with sauteed paneer.

Lazeez palak is ready. Can be served with rotis or steamed rice.
