Medu Vada is South Indian fritter made with split black gram (urad dal) .Vadas have crispy outer covering & soft & fluffy inside. It makes perfect breakfast when accompanied with coconut chutney & sambar.
Ingredients
2 cups urad dal
1/2 inch ginger
2-3 green chilies
4-5 crushed pepper (optional)
Salt to taste
Oil for frying
Procedure
Soak urad dal for 4-5 hours. Grind it in mixer along with ginger, chilies & pepper. Do not add water while grinding. Make it smooth mixture but thick consistency.
Now mix salt as per taste. Mix the vada batter with hand so as to incorporate air into the batter. The trick to light vadas is mixing it in one direction for 5-7 minutes till it becomes light in color. Pour some batter into water. If it floats, the consistency is right.
Wet the hands with water. Take the batter in hand & slowly make in round shape. Make a hole in between for even frying.
Now slide it into oil which is medium hot. Deep fry on both sides.
Crispy medu vadas are ready. Can be served with coconut chutney and sambar.
