Narali Bhat is a Maharashtrian sweet delicacy prepared on the occassion of Narali Poornima or Raksha Bandhan. Naral means coconut & narali bhat is rice cooked in coconut milk. Aromatic rice simmered in coconut milk sweetened with jaggery and flavoured with cardamom brings out the real spirit of brother sister bond
Ingredients
1 cup Basmati Rice
2 cups thin coconut milk
1 cup ( sugar + jaggery )
1 tbsp ghee
2 cloves
6-7 roasted cashew nuts
10-12 raisins
7-8 twigs saffron
1/2 tsp cardamon powder
Pinch of salt ( optional )
Method
Soak rice in water for 30mins.Heat ghee in a pan. To this add cloves. Drain the rice from water & add to this.Stir it for a while.
Then add thin coconut milk & cook the rice. Throw in some saffron twigs to this.It gives a nice golden colour. Add a pinch of salt. When most of the milk is drained cover & cook for 8-10 minutes.
While the rice gets cooked , we need to make the sugar jaggery syrup. Take sugar & jaggery. Add water to just soak the sugar & keep stirring while sugar & jaggery are dissolved. Take it in a plate to feel the sticky consistency but not too thick.
Check the rice if its fully cooked. Once the rice is fully cooked add the sweet syrup to it. Garnish with roasted cashews, raisins. Sprinkle cardamom powder for flavor. Turn off the heat & cover for 10 mins.
Narali bhat is ready to be served
