Ragada Pattice

Ragada Pattice is a popular street food chaats. Potato pattice is served with ragada (dried peas curry) topped with sweet & sour tamarind chutney, spicy green mint coriander chutney along with chopped onions, squeeze of lime juice. Garnished with fresh coriander.




Ingredients


2 cups white peas

1tsp ginger garlic paste

2tsp ginger chilly paste

A pinch of asafoetida

1tsp chaat masala

6-7 potatoes

Sweet Chutney

Green Chutney

100gms nylon shev

Coriander leaves

Oil for frying

Salt to taste


Now making of Ragada Pattice involves 4 steps.


Sweet Chutney


Soak dates, tamarind & jaggery in water for few minutes.Then grind it in mixer. Add a pinch of salt & sprinkle some jeera powder.


Green Chutney


Take 3-4 green chillies, some sprigs of mint leaves & coriander leaves,salt & grind it together.


Both these chutneys can be prepared before.These stay fresh upto a month if kept in freezer.



Making Pattice


Boil & mash potatoes.Add ginger chilly paste,tumeric powder, salt & mix well. Make small balls out of this mixture & roll them into shape of pattice. Shallow fry them till golden brown on both sides.Pattice are ready now.


Preparing Ragada


Soak white peas (ragada ) for 8-10 hrs & pressure cook them .Take oil in pan.Add a pinch of asafoetida,ginger garlic paste, turmeric , red chilly powder.Then add the cooked white peas, salt to taste .Let it simmer for 5 minutes.Add some fresh coriander leaves.Ragada is ready.


Now take a plate.Place the pattice in it.Pour ragada over it.Add finely chopped onions, sweet & green chutney.Sprinkle nylon shev ( finest variety ) & chaat masala.Garnish with coriander leaves.
