Rava Ladoo

Rava Ladoo is one of the favourite sweets prepared on festive occasions. This sweet cannot be missed at the time of Diwali. Rava Ladoo is an easy to make recipe unlike many other festive sweets. Here I have used rava, coconut & khava along with sugar syrup.




Ingredients


2 cups fine rava

2 tbsp ghee

1 1/2 cups freshly grated coconut

1/2 cup khava (mava)

1/2 cup milk

2-3 tsp dry fruits chopped or powdered

Handful of raisins

1/2 tsp cardamom powder

For sugar syrup


1 1/4 cup sugar

3/4 cup water

Few sprigs of saffron (optional)

Method

Take a broad pan & take sugar & water into it. Put some saffron sprigs into it. Let the saffron & sugar dissolve a bit. Keep aside for a while.

Take a pan & roast rava with ghee on low flame. Keep roasting till it gives aroma of rava & there is slight change in the colour of rava. Do not over roast. Now keep it aside.

In the same pan roast fresh coconut till the time the moisture evaporates. Now add khava & roast till the khava melts.


Now add the roasted rava to this. Also add milk to this mixture. Dry fruits should also be mixed now. For dry fruits we can used chopped almonds, walnuts & cashews according to one's liking.


Mix the raisins into it. Also add cardamom powder. If lumps are found just crumble with hand after the mixture cools a bit.


Heat the pan of sugar now. Let the sugar dissolve & the mixture will start boiling. We need a one string consistency of this recipe.


Pour a drop or two in a dish. After a while test with index & thumb. It should be sticky enough to give one string. Switch off the flame & add rava mixture into the syrup. Mix well so that no lumps are formed.


Let rava soak the sugar syrup for 3-4 minutes. Now grease palms with ghee & start making ladoos while the mixture is slightly hot. Press a bit & then make into rounds. Let the ladoos cool completely. Delicious rava ladoos are ready to relish.
