Shrikhand is a Maharashtrian sweet made with strained yogurt & topped with different flavours like cardamom, saffron, etc. It has a creamy texture & it is usually served with pooris. It is specially prepared on Gudi Padwa/Dasara festival in most of the Maharashtrian houses.
Ingredients
500gms yogurt made with full cream milk
100 gms powdered sugar
1/2 tsp cardamom powder
8-10 saffron twigs
Almond & Pistachios to garnish
Method
Take a muslin cloth & hang the yogurt for 2 hrs to drain the excess water. Then put weight on the hung yogurt for 30 minutes. Ensure that all the water is now drained.
Soak saffron twigs in warm water to get rich orange colour.
Now take a bowl & put this thick yogurt which is called chakka. Mix powdered sugar to it.Whisk it to form a creamy texture. If the yogurt looks very thick to mix, few drops of milk can be added. Hand blender can also be used for this purpose.
Add cardamom powder & saffron water.Retain few twigs to garnish.Garnish with sliced almonds & pistachios. Refrigerate for an hour. Serve chilled with pooris or just as dessert !! Tip:The hung yogurt will be reduced to half the quantity.Sugar is generally half of the reduced yogurt. Can be added more if preferred.
