Suranache Kaap is a popular Maharashtrian recipe. Suran is a magical vegetable which source of rich dietary fibre and as it has low glycemic index, it can be used by people with diabetes. It is a very versatile vegetable which can be prepared both in sweet and savoury form.
Suranache kaap can also be eaten on the days of fast and it keeps us full for longer duration of time.
Ingredients
250 grams Suran
1 tsp tamarind paste/ kokam paste
1 tsp Cumin powder
1-2 chopped green chili
Salt to taste
Rice flour to dust the slices
Oil/ghee to shallow fry
Method
Suran/Yam is sometimes itchy to the throat. So it is essential to use some souring agent in the preparation. Here I have used tamarind paste. Kokam extract can be used if it is made for fast.
Wash and Cut the suran into slices. Pat them dry. Now coat them with all the spices given above.
Heat some oil in a pan. Dust them in rice flour for crispy covering.
Shallow fry them on both sides. They should be cooked inside and form a crispy coating on the outer side. Suranache kaap makes excellent snack.
Tip : When it is used on the days of fast , do not dust with rice flour and fry in ghee.
