Taakali Palak is a Maharashtrian recipe made in every household. It is a very unique combination of spinach in spiced buttermilk. It is ideal recipe for the summers with healthy spinach and cooling effect of buttermilk.
Ingredients
1 bunch palak leaves
1/4 cup peanuts
2 cups buttermilk
2 tsp besan flour
1/4 tsp turmeric powder
1 tbsp oil
Salt to taste
1/2 tsp sugar
To temper
1tsp mustard seeds
1 tsp cumin seeds
Pinch of hing (asafoetida)
2 slit green chilies
Method
Soak raw peanuts for 2 hours in water and then cook them in cooker and keep aside.
Clean, wash and cut palak leaves. Whisk buttermilk with besan so that there are no lumps.
Now heat oil in a pan. Then add mustard seeds, cumin seeds and let it crackle. Then add green chilies and hing. Add turmeric powder. Mix well. Add the chopped palak leaves and saute for 2-3 minutes.
Then mix the buttermilk and keep stirring constantly on low flame, Once it comes to boil, let it simmer for 2 minutes. Add the salt, sugar and boiled peanuts, Taakatli Palak is ready. Serve with bhakri, roti or steamed rice.
