Veg Korma is delectable vegetable recipe which is made with assorted vegetables cooked with aromatic Indian spices mixed with butter and cream.
Ingredients
1 onion finely chopped
3 tomatoes pureed
8-10 cauliflower florets
1 carrot
8-10 french beans
1/2 cup green peas
1 diced green bell pepper
4-5 baby corns
2 tsp ginger garlic chili paste
2-3 tbsp oil
1tbsp butter
1/4 cup fresh cream
Salt to taste
Dry Spices
1 tsp cumin seeds
1 inch cinamon
2-3 cloves
1/4 tsp garam masala
1/4 tsp kasuri methi powder
1/4 tsp turmeric powder
1/2 red chili powder
Method
Par Boil cauliflower, carrots, potatoes, beans & green peas for 3-4 minutes and keep aside.
In a pan heat some oil and add cumin seeds, cinamon and cloves. Then add the chopped onions and saute it. When the onion turns golden brown add the pureed tomatoes. Cook well till the tomatoes leave oil on the sides of the pan. Add butter at this stage.
Now add ginger, garlic, chili paste and saute till it leaves aromatic flavour. Then add all the dry spices except kasuri methi. Mix all the par boiled vegetables. Add 1/2 cup water to adjust the consistency and steam cook for 5-6 minutes. Do not overcook the vegetables.
When the vegetables are cooked add salt, kasuri methi and cream. Turn off the flame. Garnish with coriander leaves. Squeeze in some lime juice before serving.
