Mixed vegetables in creamy spiced sauce with tandoor flavour in warm Indian spices. It is an easy recipe which can be customised according to seasonal vegetables. This recipe is a twist to vegetables in white sauce with addition of Indian spices.
Ingredients
Vegetables
5-6 sliced mushrooms
1 green bell pepper
10 Broccoli florets
1 carrot sliced
Salt to taste
1tsp green paste (garlic, ginger, chilli, coriander)
1tbsp Oil
1/2 tsp red chili flakes
Creamy Sauce
500 ml milk
2 tbsp Maida
1tbsp Olive oil or Butter
Tandoor Spices
1 tsp Kashmiri Red chilli powder
1/2 tsp Turmeric powder
1 tbsp Coriander powder
1 tsp Cumin Powder
1/2 tsp Black Salt
1/2 tsp Dry Mango Powder
1tsp Roasted Kasuri Methi
1/2 tsp Garam Masala
Salt to taste
Method
Heat oil in pan. Add green paste and saute for few seconds. Now saute all vegetables for a minute. I have blanced broccoli for about a minute. Add Salt and mix well. Keep aside.
In another pan heat oil or butter. Then add maida & mix well. Saute for a while till thé texture gets a bit coarse. Now add milk in batches taking care to break lumps by whisking it.
Slowly keep adding milk till you get smooth creamy sauce consistency. Now add all tandoor spices and cook it. If the mixture gets too thick, add some water to adjust the consistency.
Heat coal on direct flame for 3/4 minutes. Once the coal is live , place it in a small cup. Place the cup in centre of the sauce. Drizzle few drops of butter or ghee. The coal will start to smoke. Close the lid immediately & allow the smoke to settle in sauce. Keep it for 5 minutes. Smoke Tandoor sauce in now ready.
Add tossed veggies in the sauce & let it cook for 2 minutes. Add red chilli flakes.Garnish with coriander leaves. Vegetables in creamy tandoori sauce are ready. Tip
Vegetables can be use in any quantity as per choice. Other veggies like coloured bell peppers, zucchini can also be used
